Ingredients:

Arugula: 3 cups (fresh)

Red onion: 1 small

Cherry tomatoes: 1 cup

Sumac: 1 teaspoon (ground)

Instructions:

Wash the arugula thoroughly and pat dry.

Slice the onion thinly and cut the cherry tomatoes in halves or quarters.

In a large glass bowl, combine the arugula, onion, and tomatoes, and gently toss.

Add the sumac, salt, lemon juice, and olive oil. Mix the salad gently so all ingredients are coated with the dressing. Avoid adding salt too early, as it can make the arugula wilt quickly.
