Ingredients
Lemon Glaze:
Powdered sugar: ½ cup
Lemon juice: 2 tbsp
Lemon zest: ½ tsp
Cake:
All-purpose flour: 2 cups (sifted)
Baking powder: 1½ tsp
Salt: a pinch
Eggs: 3
Sugar: 1 cup
Vegetable oil: ½ cup
Yogurt: 1 cup
Lemon juice: 3 tbsp (fresh)
Lemon zest: 1 tsp
Vanilla extract: ½ tsp
Preparation
Preheat the oven to 170°C (340°F) and prepare a cake pan by greasing it with butter or oil and lightly dusting with flour.
In a large bowl, whisk together eggs, sugar, and vanilla until pale and fluffy (about 3–4 minutes).
Add the oil, yogurt, lemon juice, and lemon zest, and mix until well combined.
In a separate bowl, combine the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, folding gently with a spatula or whisk just until the flour disappears.
Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes in the pan before removing.
Prepare the glaze by mixing powdered sugar, lemon juice, and lemon zest until smooth.
Pour the glaze over the completely cooled cake before serving.
