Ingredients:

200 g whole wheat spaghetti

1 tablespoon olive oil

1 garlic clove, crushed

1 small onion, chopped

1 zucchini, diced

1 carrot, thinly sliced

1 red bell pepper, sliced

2 tomatoes, grated

1 teaspoon soy sauce (optional)

Pinch of salt

Pinch of black pepper

½ teaspoon oregano

Instructions:

Cook the pasta in salted water according to package instructions, then drain and set aside.

Heat olive oil in a large pan over medium heat, add the onion and garlic, and sauté until softened.

Add zucchini, carrot, and red pepper, cooking for about 5 minutes until the vegetables are slightly tender.

Stir in the grated tomatoes and soy sauce, and simmer on low heat for 6–8 minutes until the sauce thickens.

Season with salt, black pepper, and oregano.

Add the cooked pasta to the pan and toss gently until coated with vegetables and sauce.

Serve hot.
