• 1 medium cauliflower head, cut into florets
• 2 tablespoons butter
• 2 tablespoons flour
• 2 cups milk
• 1 cups shredded mozzarella cheese
• 1 cups shredded cheddar cheese
• 1 teaspoons salt
• 0.3 teaspoons black pepper
• 0.1 teaspoons nutmeg
• 2 tablespoons chopped parsley (for garnish)
STEPS
1. Boil the cauliflower: Boil the cauliflower florets (1 medium cauliflower head, cut into florets) in salted boiling water for 5 to 7 minutes, then drain well.
2. Make the roux: Melt the butter (2 tablespoons butter) in a pot over medium heat, then add the flour (2 tablespoons flour) and stir for one minute.
3. Add the milk: Gradually pour in the milk (2 cups milk), stirring constantly, until you get a smooth, thick béchamel sauce.
4. Season and add cheese: Add the salt (1 teaspoons salt), black pepper (0.3 teaspoons black pepper), and nutmeg (0.1 teaspoons nutmeg), then mix in half the cheese (1 cups shredded mozzarella cheese, 1 cups shredded cheddar cheese) with the béchamel until melted.
5. Assemble the dish: Arrange the cauliflower in a baking dish, then pour the béchamel sauce evenly over it.
6. Top with cheese: Sprinkle the remaining cheese on top.
7. Bake: Bake in a preheated oven at 200°C (390°F) for 20 to 25 minutes, then broil for a few minutes until the top turns golden.
