Easy Homemade Spinach Omelette
Ingredients:
3 eggs
1 cup fresh spinach, chopped
½ small onion, finely chopped
50g feta cheese (or your preferred cheese)
5 cherry tomatoes, halved
1 tablespoon olive oil or butter
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley, for garnish
preparation:
Heat the olive oil or butter in a non-stick frying pan over medium heat.
Add the chopped onion and sauté for about 2 minutes until soft and translucent.
Stir in the spinach and cook until wilted.
In a small bowl, whisk together the eggs, salt, and black pepper.
Pour the egg mixture over the spinach and onions, allowing it to begin setting.
Arrange the cherry tomato halves and crumbled feta over one half of the omelette.
Cook over low heat for 2–3 minutes, or until the eggs are fully set.
Carefully fold the empty half over the filling and cook for another minute.
Transfer to a serving plate and garnish with chopped parsley.
Serve immediately and enjoy a delicious, healthy breakfast that's both filling and easy to prepare.
