How to Make Creamy Finnish Salmon Soup at Home
Ingredients:
  • 500g salmon fillet, cut into large pieces
  • 3 medium potatoes, cut into medium pieces
  • 2 carrots, sliced1 onion, finely chopped
  • 1 tablespoon butter
  • 750ml fish stock or vegetable stock
  • 200ml cooking cream
  • 2 bay leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried dill2 tablespoons fresh dill, chopped

Method:
1. Melt the butter in a deep pot over medium heat, then add the onion and stir until softened without changing color.

2. Add the carrots and potatoes and stir with the onion for about 2 minutes until combined.

3. Pour the stock into the pot, then add the bay leaves, salt, and black pepper, and bring to a boil.

4. Reduce the heat and cover the pot, letting the potatoes and carrots cook for 12–15 minutes until nearly tender.

5. Gently add the large salmon pieces to the soup and let simmer on low heat for 5–7 minutes until the salmon is cooked through.

6. Add the cooking cream and dried dill, and stir the soup gently until the cream blends into the broth.

7. Let the soup simmer gently for 2–3 minutes, avoiding a hard boil so the cream stays smooth.

8. Add the lemon juice and taste the soup, then adjust the salt and pepper to your liking.

9. Ladle the soup into serving bowls, distributing the salmon, potato, and carrot pieces evenly, then garnish generously with fresh dill.
