How to make easy shrimp fajitas with vegetables
Ingredients:
680 grams large shrimp, peeled, with tails on or removed according to preference
3 tablespoons olive oil
2 large red bell peppers, sliced
3 large jalapeños, sliced and seeded to reduce their heat
1 large onion, cut into half-moon slices
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
½ teaspoon chili powder (optional)
½ teaspoon sea salt
Black pepper, to taste
PreparationIn a small bowl, combine the chili powder, cumin, paprika, garlic powder, oregano, salt, and black pepper, mixing well.
Pat the shrimp dry with paper towels to remove as much moisture as possible.
Place the shrimp in a bowl, add the spice mixture, and toss until evenly coated.
Heat 1½ tablespoons of olive oil in a large skillet over medium-high heat.
Add the red bell peppers, jalapeños, and onion. Sauté for about 4–5 minutes,
until the vegetables develop charred marks.
Season the vegetables with a little salt to taste, then remove them from the skillet.
Add the remaining olive oil to the same skillet and arrange the shrimp in a single layer.
Cook the shrimp over high heat for 1–2 minutes per side, until fully cooked.
If using a large quantity of shrimp, cook them in two batches to avoid overcrowding the skillet and ensure proper browning.
Return the vegetables to the skillet and toss with the shrimp for about one minute, until heated through.
Add lime juice, then garnish with fresh cilantro.
Serve the shrimp fajitas with corn or flour tortillas. Add sour cream, guacamole, avocado cream, green onions, or shredded Mexican cheese, as desired.
