As autumn arrives and temperatures gradually drop, the cooler weather often brings cravings for warm, comforting seasonal meals — along with changes in eating habits.

While many people try to cut back on carbohydrates to stay fit, choosing the right kind of seasonal starch can actually be a powerful ally in your health journey.
According to Professor Franklin Joseph, medical director of the Dr. Frank Weight Loss Clinic, pumpkin and winter squash are the “ideal carbohydrates” — high in fiber, low in calories, and excellent for maintaining satiety and stable blood sugar levels, making the body more efficient at burning fat.
Unlike refined or processed carbohydrates, pumpkin contains complex carbs and plenty of water. One cup provides only 50 calories and over 2 grams of fiber, as well as resistant starch that feeds beneficial gut bacteria and improves insulin sensitivity — allowing the body to access stored fat more easily for energy.
Joseph adds, “Pumpkin and squash are slow-burning fuels; they don’t spike insulin levels like bread or pasta, so your metabolism stays in fat-burning mode longer.”
Scientific studies show that diets rich in resistant starch increase fat oxidation and reduce appetite, while beta-carotene — the orange pigment that gives pumpkin its color — is linked to better metabolic health and reduced inflammation.
A Perfect Substitute for Traditional Carbs
Professor Joseph recommends replacing half of your usual portion of pasta, rice, or potatoes with roasted squash or pumpkin puree. He warns against adding excess butter or cream to these healthy carbs, noting: “All you need is a drizzle of olive oil and a few herbs and spices.”
The Importance of Healthy Carbs for Fat Burning
Joseph emphasizes that drastically cutting carbs can backfire, as the body needs them for energy and exercise performance. The key is to choose slow-digesting, nutrient-rich options, like autumn vegetables.
He concludes, “Pumpkin isn’t just for decoration — it’s one of the best foods to boost fat burning this season. It’s naturally sweet, filling, and supports a healthy metabolism.”
