Ingredients
500 g (1 lb) boneless, skinless chicken breast (2 pieces)
Salt and pepper
¼ cup flour (Note 1)
3½ tbsp (50 g) unsalted butter, or 2½ tbsp olive oil
2 garlic cloves, minced
1½ tbsp apple cider vinegar, or white or another clear vinegar
1 tbsp light or all-purpose soy sauce (Note 2)
⅓ cup honey, or maple syrup
Instructions
Cut the chicken breasts in half horizontally to make four steaks. Season both sides with salt and pepper.
Place the flour in a shallow dish. Coat the chicken in flour, then shake off any excess.
Melt most of the butter in a large skillet over high heat, reserving about 1 tsp for later.
Add the chicken to the skillet and cook for 2–3 minutes, until golden. Turn and cook the other side for 1 minute.
Reduce the heat slightly to medium-high.
Make some space in the pan and add the garlic, topping it with the reserved butter. Briefly stir the garlic once the butter has melted.
Add the vinegar, soy sauce and honey. Stir or shake the pan to combine. Bring the sauce to a simmer and cook for 1 minute, or until slightly thickened.
Turn the chicken to coat it in the sauce. If the sauce becomes too thick, add a little water and stir.
Remove the pan from the heat immediately. Serve the chicken on plates and drizzle with the remaining sauce.
