INGREDIENTS• 0.8 cups dried figs, stems removed
• 0.8 cups dried apricots
• 0.8 cups raisins
• 0.8 cups dried blueberries
• 0.8 cups dried apples and pears
• 0.3 cups dried cranberries
• 0.3 cups honey, agave syrup, or pure maple syrup (for a vegan option)
• 0.8 cups whole roasted hazelnuts, coarsely chopped
• 0.8 cups sliced almonds
• 0.3 cups gluten-free whole-grain oats
• 0.3 cups finely shredded unsweetened coconut
STEPS
1. Pulse the dried fruit: Place the dried figs (0.8 cups dried figs, stems removed), apricots (0.8 cups dried apricots), raisins (0.8 cups raisins), blueberries (0.8 cups dried blueberries), apples and pears (0.8 cups dried apples and pears), cranberries (0.3 cups dried cranberries), and honey (0.3 cups honey, agave syrup, or pure maple syrup (for a vegan option)) in a food processor and pulse several times to break the ingredients down.
2. Blend until sticky: Keep blending until the ingredients are well broken down and start to come together and form a ball. You may need to scrape down the sides of the bowl several times while blending.
3. Mix in nuts and oats: Remove the dried fruit mixture from the food processor and place it in a large bowl. Add the hazelnuts (0.8 cups whole roasted hazelnuts, coarsely chopped), almonds (0.8 cups sliced almonds), and oats (0.3 cups gluten-free whole-grain oats), and mix well with a metal spoon or your hands until evenly combined.
4. Shape and coat: Take a small amount of the mixture and shape it into a ball between your palms. Repeat until all the mixture is used, then roll each ball in the shredded coconut (0.3 cups finely shredded unsweetened coconut).
5. Serve: Serve the energy balls as a snack between meals.
6. Storage: The energy balls can be stored in the refrigerator for several weeks, or in the freezer for up to 3 months. They can also be kept at room temperature and eaten that way.
