Ingredients:
Watermelon: 1/2 a watermelon (seedless, cut into thick slices)
Arugula: 6 cups (fresh)
Feta cheese: 170g (cubed)
Mint: A handful (fresh and coarsely chopped)
Olive oil: As needed
Coarse salt: To taste
Preparation Method:
Cut the watermelon into thick slices. Brush both sides of each slice lightly with olive oil, then sprinkle with a pinch of coarse salt.
Preheat your grill to high heat until it becomes very hot.
Place the watermelon slices directly onto the grill and let them sear for 4 minutes without moving them to get distinct grill marks.
Flip the slices over and grill the other side for an additional 3 minutes.
Remove the watermelon from the grill and let it cool slightly.
Remove the rind, then cut the grilled watermelon into medium-sized cubes.
Spread the arugula onto a serving platter, then add the grilled watermelon cubes and cubed feta cheese on top.
Scatter the chopped mint leaves over the top.
Drizzle with a little olive oil and serve the salad finished with a light sprinkle of coarse salt.
Serve the grilled watermelon salad cold or at room temperature.
