• 2 tablespoons fine white sugar (for topping)

STEPS
1. Reduce the applesauce: Place the applesauce (0.3 cups unsweetened applesauce) in a small pot over medium heat and let it come to a gentle simmer, then lower the heat and let it simmer, stirring occasionally, until reduced by about half.

2. Cool the applesauce: Remove from heat and let it cool completely.

3. Preheat oven: Preheat the oven to 180°C (350°F), and line baking trays with parchment paper.

4. Mix dry ingredients: In a large bowl, mix the oats (2 cups whole oats), flour (1.3 cups all-purpose flour), baking soda (0.5 teaspoons baking soda), salt (0.5 teaspoons salt), cinnamon (1 teaspoons ground cinnamon), mixed spice (0.5 teaspoons mixed spice), and nutmeg (0.3 teaspoons ground nutmeg).

5. Cream butter and sugar: In another bowl, beat the butter (0.5 cups unsalted butter, room temperature) with the white sugar (0.5 cups white sugar) and brown sugar (0.5 cups brown sugar) for 5 minutes until light and creamy.

6. Add wet ingredients: Add the reduced applesauce, egg yolk (1 egg yolk), and vanilla (1 teaspoons vanilla extract), then beat until combined.

7. Combine dough: Gradually add the dry ingredient mixture and beat on low speed until a firm dough forms.
