Ingredients:

2 large skinless, boneless chicken breasts

3 tablespoons balsamic vinegar

2 tablespoons olive oil

½ teaspoon black pepper

Instructions:

Using the tip of a knife, score the chicken breasts diagonally in both directions to create a crosshatch pattern, forming small squares on both sides.

In a small bowl, mix the balsamic vinegar, olive oil, salt, and black pepper well. Rub the mixture thoroughly onto the chicken, making sure it gets into the scored cuts.

Let the chicken marinate in the refrigerator for at least 30 minutes.

Preheat a grill or grill pan over medium heat.

Place the chicken breasts on a small baking tray and put it on the middle rack of the oven. Grill for 15 minutes, then flip the chicken and cook for another 20 minutes or until fully grilled and the scored lines are darkened.

Remove the chicken from the oven, place on a serving plate, and top each breast with a spoonful of butter. Serve hot.
