Not all dietary fats affect the body in the same way. Palmitic acid, a saturated fatty acid, may promote inflammation and impair insulin sensitivity, potentially increasing the risk of type 2 diabetes. A study highlighted by ScienceDaily examined how different types of dietary fats influence metabolic health and the risk of type 2 diabetes. The findings suggest that the type of fat consumed may matter more than the total amount, with oleic acid potentially supporting healthier fat storage and insulin signaling in the liver, muscles and adipose tissue.

Researchers also identified cellular and molecular mechanisms linking harmful fat accumulation to inflammation, insulin resistance and cell dysfunction. The findings may help explain why diets rich in monounsaturated fats, such as the Mediterranean diet, are associated with a lower risk of diabetes and metabolic disorders.

Researchers emphasized that the health impact of fatty acids depends not only on their type, but also on their food source, overall dietary context, interactions with other nutrients and food-processing methods.
