Ingredients
Whole chicken: 2.5 kg (5.5 lbs)

Unsalted butter: 4 tbsp (melted)

Olive oil: 2 tbsp

Garlic: 3 cloves (minced)

Rosemary: 1 tbsp (fresh, chopped)

Thyme: 1 tbsp (fresh)

Sage: 1 tbsp (chopped)

Salt: 1.5 tsp

Black pepper: 1 tsp

Lemon: 1 piece (cut into slices or quarters)

Preparation Instructions
Preheat the oven to 220°C (425°F).

Wash the chicken and dry it thoroughly using paper towels until it is completely dry (this is key to achieving a crispy skin).

Season the inside of the chicken cavity with a little salt, then stuff it with the lemon slices and some of the herbs.

In a small bowl, mix the melted butter with the olive oil, minced garlic, rosemary, thyme, sage, salt, and black pepper.

Gently loosen the chicken skin using your fingers, and rub a portion of the butter mixture directly underneath the skin.

Rub the remaining mixture over the entire outer surface of the chicken.

Place the chicken breast-side up on a roasting pan fitted with a rack.

Roast in the oven for 75–90 minutes until completely cooked through and the internal temperature reaches 75°C (165°F).

During cooking, baste the chicken with its own juices once or twice to enhance the flavor.

After removing it from the oven, let the chicken rest for 10–15 minutes before carving.

Serve hot alongside mashed potatoes, roasted vegetables, or a fresh salad.
