Ingredients:
1 ready-made tart crust or homemade pie dough
2 medium potatoes
250 grams fresh salmon fillets
1 medium leek
3 eggs
200 ml cooking cream
100 grams grated cheese
2 tablespoons fresh dill, chopped
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
A pinch of nutmeg

Method:
1. Preheat the oven to 180°C. Roll out the tart dough and place it in a suitable tart pan, gently pressing it into the sides and base.

2. Prick the base with a fork, then cover it with parchment paper and place baking weights or a small amount of dried beans on top. Bake for 10 minutes.

3. Peel the potatoes and cut them into thin slices. Boil them in salted water for a few minutes until slightly tender but not fully cooked.

4. Thinly slice the leek and sauté it in the olive oil over medium heat until softened.

5. Cut the salmon into medium-sized pieces and season lightly with salt and black pepper.

6. Whisk the eggs with the cooking cream, grated cheese, dill and nutmeg until well combined.

7. Arrange the potato slices, leek and salmon pieces over the partially baked tart crust, then pour the egg-and-cream mixture evenly over the filling.

8. Sprinkle some fresh dill on top, then return the tart to the oven and bake for 30–35 minutes, until the filling is set and the top is golden.

9. Remove the tart from the oven and let it rest for 10 minutes before slicing. Serve warm with a green salad, if desire.
