INGREDIENTS
• 2 cups whole wheat flour
• 0.3 cups brown sugar
• 1 teaspoons salt
• 1 tablespoons instant yeast
• 1 cups warm water (approximate, as needed)
• 2 liters water, for boiling bagels
• 0.3 cups brown sugar, for boiling water
• 0.3 cups sesame seeds, nigella seeds, or assorted seeds (for topping)
• 1 egg white
• 1 tablespoons water (for egg wash)

STEPS
1. Activate the yeast: In a small bowl, mix the warm water (1 cups warm water (approximate, as needed)) with the yeast (1 tablespoons instant yeast) and 1 tablespoon of the brown sugar, then set the mixture aside for a few minutes until it becomes foamy with bubbles on the surface.

2. Mix dry ingredients: In a large bowl, mix the whole wheat flour (2 cups whole wheat flour) with the salt (1 teaspoons salt) and the remaining brown sugar (0.3 cups brown sugar).

3. Knead the dough: Add the yeast mixture to the dry ingredients, then knead for 10 minutes until you get a smooth, firm dough. If the dough is sticky, you can gradually add a small amount of flour as needed.

4. Rest the dough: Let the dough rest for 5 minutes after kneading.
5. Divide and shape: Divide the dough into 8 equal pieces, then shape each piece into a ball.

6. Shape the bagels: Using your thumb, make a hole in the center of each ball and gently widen it while rotating the dough until it takes the traditional bagel shape.

7. Add seeds: Sprinkle the bagels with your preferred seeds (0.3 cups sesame seeds, nigella seeds, or assorted seeds (for topping)).

8. Place on tray: Place the pieces on a tray lined with parchment paper.

9. Let rise: Cover the bagels with plastic wrap and let them rise for 30 minutes until they increase slightly in size.

10. Preheat oven: Preheat the oven to 220°C (430°F).

11. Prepare boiling water: In a large pot, boil the water (2 liters water, for boiling bagels), then add the brown sugar (0.3 cups brown sugar, for boiling water) and stir until dissolved.

12. Boil the bagels: Place the bagels in the boiling water in batches, letting each one boil for one minute on each side.

13. Drain bagels: Lift them out using a slotted spoon and return them to the tray.

14. Apply egg wash: Mix the egg white (1 egg white) with the water (1 tablespoons water (for egg wash)), then brush the mixture over the surface of the bagels to give them a shiny golden color after baking.

15. Bake: Place the tray in the oven and bake the bagels for 15 to 17 minutes, or until they take on an appetizing golden color.

16. Cool: Remove the bagels from the oven and let them cool for 10 minutes before serving.

17. Storage note: The bagels can be stored in a sealed bag at room temperature for up to 3 days.
