4 medium-sized tortillas

1 sweet red bell pepper, finely diced

1 sweet yellow bell pepper, finely diced

1 onion, sliced

1 cup sweet corn

1/2 cup cooked red kidney beans

1 cup fresh spinach leaves

1 1/2 cups shredded mozzarella or cheddar cheese

1 tablespoon olive oil

1/2 teaspoon paprika

A pinch of salt

A pinch of black pepper

Preparation Method:

Heat the olive oil in a skillet over medium heat.

Add the onion, red bell pepper, and yellow bell pepper, and sauté for 3 minutes.

Add the corn, red kidney beans, paprika, salt, and black pepper, then stir the ingredients well for 2 minutes.

Place a tortilla in a hot skillet, then spread half of the cheese over it.
