Ingredients
Chicken: 1 whole chicken (cleaned and butterflied/spatchcocked).

Pomegranate Molasses: ¼ cup.

Butter: 1 tablespoon (softened).

Salt: 1 teaspoon.

Black Pepper: ¼ teaspoon.

Chicken Broth: ¼ cup.

Onion: 1 medium onion (finely chopped).

Olive Oil: 1 tablespoon.

Preparation Steps
Seasoning: Season the chicken thoroughly with salt and black pepper.

Glazing: Rub the chicken with the butter and coat it evenly with the pomegranate molasses.

Baking Dish Setup: Spread the olive oil in a baking dish and scatter the chopped onions across the bottom.

Arranging: Place the seasoned chicken in the dish and pour the chicken broth around it.

Initial Roasting: Cover the dish with aluminum foil. Bake in a preheated oven at 200°C for 20 minutes.

Slow Cooking: Reduce the oven temperature to 170°C and leave the chicken for another 45 minutes until fully cooked and tender.

Browning & Serving: Remove the foil and broil the top until golden and crispy. Serve hot alongside rice or potatoes as desired.
